Healthy Meal of the Day
- In a pot, heat oil. Sauté onion, celery, and spices for until onions are softened. Stir in peppers and sweet potatoes.
- Stir in broth, cover and bring to a boil. Reduce heat and boil gently until potatoes are almost tender.
- whisk flour into milk. Stir milk mixture into pot. Stir in chickpeas. Simmer, until chowder is bubbling.
- Stir in Tomatoes, drizzle Vinegar, top with Green Onion or Parsley.
- Cook Pasta until almost tender, stir in peas and boil for 1 minute.
- Meanwhile: sauté onions, garlic, and red pepper for 3 minutes. Stir in Ricotta then milk and reduce heat. Stir in Pamesan cheese.
- Drail Pasta and return to bowl, stir in half of the zucchini, basil, lemon zest and juice; toss to coat. Season with Pepper to taste and sprinkle remaining toppings.
- Stir together celery, carrot, onion, garlic and hot pepper flakes in slow cooker. Add tomatoes and beans. Pour in water and broth; stir to combine. Cover and cook on Low for 4 hours or on High for 2 hours.
- Uncover and stir in pasta and basil. Cover and cook for 30 minutes or until pasta is tender. Sprinkle with cheese, if desired.
